Baked Pepper Chicken with Red Potatoes

This recipe came about from these events:

  • The chicken drumsticks were the only things that were not frozen in the fridge.
  • We had more than our share of Green and Red Pepper, Tomatoes and Onion (someone gave them to us)
  • We just bought the small red potatoes and didn’t really put them away yet.

So here is how we made it:

Ingredients:

  • defrosted chicken drumsticks (or any part really)
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 large white onion
  • 1 large red tomatoe
  • small red potatoes
  • salt, pepper, olive oil (all to taste)

The Nitty-Gritty:

  • Slice all the veggies into long pieces ( i dont know what the proper chopping term is)
  • Place ALL the ingredients in a pan.
  • Give it some love – mix all ingredients with your hands.
  • Cover in foil.
  • Bake at 350 degrees for 1 hr 30 minutes.
  • Serve with steam rice

We had our friends Mary Rose and Joe over that evening for dinner and they loved it.

A Foodie’s Worst Nightmare

Sitting on a dentist chair always makes me feel uncomfortable. Had to go to the Dentist for a semi-emergency appointment last week because the filling in one of my molars came off and chunks of food was taking its place. Dentist Mimi drilled and clawed almost my entire tooth out. After sitting there for what seemed like hours, she happily mentioned that she took off all the cavity parts. But I was glad to hear that none of the bad stuff hit my nerves! No root canal for now! Close call!

Farm Fresh Omelet

+ Cage Free Eggs (x2)
+ Organic Red Pepper (sliced)
+ Cheese
+ Organic Orange Juice

~ Whisk eggs and orange juice in bowl
~ Oil pan
~ Pour egg and orange juice mix
~ Add red pepper
~ Top with cheese
~ Serve with Wheat Toast
