This recipe came about from these events:
- The chicken drumsticks were the only things that were not frozen in the fridge.
- We had more than our share of Green and Red Pepper, Tomatoes and Onion (someone gave them to us)
- We just bought the small red potatoes and didn’t really put them away yet.
So here is how we made it:
Ingredients:
- defrosted chicken drumsticks (or any part really)
- 1 green bell pepper
- 1 red bell pepper
- 1 large white onion
- 1 large red tomatoe
- small red potatoes
- salt, pepper, olive oil (all to taste)
The Nitty-Gritty:
- Slice all the veggies into long pieces ( i dont know what the proper chopping term is)
- Place ALL the ingredients in a pan.
- Give it some love – mix all ingredients with your hands.
- Cover in foil.
- Bake at 350 degrees for 1 hr 30 minutes.
- Serve with steam rice
We had our friends Mary Rose and Joe over that evening for dinner and they loved it.
